The Vegetarian

 Mushroom and Pea Masala Curry

Obviously this is my version of a dish which is often found in restaurants.

2 cups of mushrooms - chopped into quarters
1/2 cup of peas (defrosted)
1 tablespoon of tomato paste
1 tomato - diced
2 teaspoons of garam masala powder
1 small onion- diced
2 cloves of garlic - chopped finely
1 teaspoon of cummin
2 teaspoons of coriander
1/2 teaspoon of chilli powder
1-2 teaspoon of oil or ghee
salt to taste

Wash and chop up the mushrooms and defrost the peas.

In a large pot use the oil to slightly brown the onion and garlic. Add the mushrooms and sautee until they start to decrease in size. Add the diced tomato, tomato paste and half a cup of water. While simmering add the cummin, coriander and chilli and simmer until the tomato breaks up.

Add a half teaspoon of salt and taste test. Take off the heat and add the peas and garam masala, stir in and serve.

note: the peas and garam masala are added last so that they are not overcooked.
